Mandarin semolina porridge

Ingredients for 2 servings:

  • 70 g semolina (soft wheat semolina)
  • 50 g sugar
  • 1 packet of vanilla sugar
  • 1 can of tangerine(s)
  • 500 ml milk
  • 1 egg(s)
  • 2 pinches of salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Bring the milk to a boil. Meanwhile, separate the egg and beat the egg whites with a pinch of salt until stiff peaks form. Add the sugar, vanilla sugar, and a pinch of salt to the milk. When the milk boils, remove from the heat and stir in the semolina. Return the pan to the heat and stir in the egg yolks. When the semolina porridge returns to a boil, remove the pan from the heat and fold in the beaten egg whites. Finally, stir in the mandarin oranges and their juice. Serve in a bowl.
