Ingredients for 1 servings:
- 250 g biscuits, crumbled
- 125 g butter, semi-skimmed if you like
- 5 egg yolks
- 125 g sugar
- 750 g quark (low-fat quark)
- 500 g mascarpone
- 2 packs of pudding powder, vanilla
- 2 tbsp liqueur (vanilla liqueur)
- 1 tsp vanilla pod(s), ground
- 5 egg whites
- 1 pinch of salt
- 50 g sugar
- 1 can of tangerine(s)

Variation of the ultra-creamy cheesecake
For the base, mix the biscuit crumbs with the melted butter and press into the bottom of a springform pan. Alternatively, you can use shortcrust pastry. Beat the egg yolks with the sugar until thick and creamy, then gradually stir in the quark and mascarpone. Then sift in the custard powder and stir in along with the vanilla and liqueur. Beat the egg whites with salt until stiff peaks form, then drizzle in the sugar and carefully fold the stiff peaks into the cheese mixture. Spread about 4 tablespoons of the cheese mixture onto the base and scatter the mandarins on top. Then spread the remaining mixture on top. Bake at 180°C for about 35-40 minutes. Then remove from the oven and cut horizontally around the sides about 2 cm deep so that the cake can collapse evenly afterwards. After 10 minutes, return to the oven and bake for a further 20-25 minutes.
