Ingredients
 

  • 500 g Tuna
  • 1 Pc. Fresh mango
  • 2 Pc. Avocados
  • 2 Pc. Squeezed oranges
  • 4 tbsp Granulated Dijon mustard
  • 1 Pc. Squeezed lemon
  • 1 tbsp Agave syrup
  • 2 Pc. Spring onion
  • Salt
  • Pepper
  • Red chilli flakes
  • Cress

Instructions
 

Mango-avocado-tuna tartare:

  • Finely dice the tuna, avocado and mango. Cut the spring onions into small rings and mix with the tuna.
  • Season the whole thing with salt, pepper and a little chilli and add some of it to the tuna, the rest will later be used as a sauce.
  • To serve, layer the avocado, mango and tuna in a tower. Drizzle with sauce and top with the cress.
