Mango granita

Ingredients for 10 servings:

  • 1 mango(s), ripe
  • 600 ml water
  • 60 g sugar
  • ½ lemon(s)
  • 1 shot of rum

Instructions

Working time approx. 10 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 5 minutes; Total time approx. 8 hours 15 minutes

quick to make and very refreshing

Dissolve the sugar in the water. Peel the mango and dice the flesh. Add it to the sugar solution and puree thoroughly with a hand blender. Season with lemon juice and rum to taste. Pour into a shallow, sealable container and freeze thoroughly. After two to three hours, as soon as the first ice crystals form, stir with a fork every 30 minutes to prevent the mixture from becoming a solid block. Thaw in the refrigerator for half an hour before serving, then shave off shavings from the granita with a spoon and serve in ice-cold glasses.
