Ingredients for 2 servings:
- 1 m.-sized mango(s)
- 200g mozzarella
- 250 g cocktail tomatoes
- e.g. arugula
- lemon juice
- Balsamic vinegar, white
- olive oil
- Mustard
- Honey
- salt and pepper
- n. B. herbs
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Peel the mango (I prefer a slightly unripe, hard mango) and cut into pieces, along with the mozzarella. Halve the cherry tomatoes. Mix a marinade of lemon juice, white balsamic vinegar, olive oil, water, a little mustard, and honey, and season with salt, pepper, and fresh herbs to taste. Mix the mango, mozzarella, and cherry tomatoes with the marinade and let it sit for a few minutes. Add the arugula and toss to combine. Serve with bread.
