Mango sauce with white wine

Ingredients for 4 servings:

  • 40 g sugar
  • 1 mango(s), ripe
  • 100 ml white wine
  • ½ lemon(s), juice

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 15 minutes

Peel the mango, remove the pit, and cut into pieces. Caramelize the sugar in a saucepan, then deglaze with the white wine. Add the mango pieces, bring to a boil, and simmer for 2 minutes. Remove from the heat and puree until smooth. I use a slotted beaker on my hand blender to ensure the sauce is smooth. A very fine sieve doesn’t work, or is very difficult. Let cool and serve. The sauce is very easy to prepare. We like it best with quark cream (quark, low-fat quark, yogurt, a little whipped cream, lemon, or gelatin). It also tastes wonderful with vanilla ice cream, vanilla cream, or with extra gelatin as the top layer of a quark cake.
