Ingredients

  • 0,5 bunch Basil
  • 1 Mozzarella
  • Sea salt
  • Pepper from the grinder
  • 1 pinch Sugar
  • 2 Garlic cloves
  • 4 tbsp Tomato paste
  • 300 ml Tomato juice
  • 1 shot Balsamic vinegar
  • Olive oil
  • 1 Bay leaf

  • 0,5 dice Yeast fresh
  • 50 ml Water
  • 0,5 tsp Sea salt
  • 1 pinch Sugar
  • 1 tbsp Olive oil
  • 150 g Flour

Instructions

  • Dissolve the yeast and sugar in warm water. Mix in the flour, olive oil and salt. Knead the dough thoroughly and let it rest for an hour so that the yeast can work.
  • Knead the dough again and divide it in two. Roll out thinly and let rise again.

Covering

  • In the meantime, peel the garlic, chop it finely and sweat it in olive oil with tomato paste and sugar. Deglaze with balsamic vinegar and add tomato juice. Add bay leaf and let it reduce. Remove the bay leaf.
  • Spread the tomato sauce on the pizzas and bake in the preheated oven at 190 ° C fan oven.
  • Take the crispy pizzas out of the oven and drizzle with olive oil. Top with mozzarella and basil. Salt, pepper, serve.
