Ingredients for 4 servings:
- 1 kg pork (neck or schnitzel meat)
- 3 onions
- 100 g smoked bacon
- 50 ml olive oil
- 1 tsp black pepper, ground
- 1 tsp cumin, ground
- 2 tsp thyme, dried
- 4 cloves garlic
Instructions
Working time approx. 20 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 20 minutes
Cut the meat into thin strips. Peel the onions, finely dice them, or mince them. Do the same with the bacon. Add both to the meat strips. Mix a marinade of olive oil, pepper, cumin, and thyme. Pour over the meat and let it marinate (at least 12 hours). The next day, pan-fry in batches and keep warm in the oven at 100°C until all the meat is cooked. My tzatziki and spicy rice, for example, go well with this.
