Marinated oil herring

Ingredients for 4 servings:

  • 2 packs of fish (oiled herring)
  • 8 gherkins and 8-10 tbsp cucumber juice
  • 3 onions
  • 1 large apple, sour
  • 2 bay leaves
  • 4 juniper berries
  • 1 tsp cinnamon
  • 2 tbsp mayonnaise
  • 500 ml cream

Instructions

Working time approx. 10 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 10 minutes

Mix the cream with mayonnaise, cucumber juice, and cinnamon. Drain the oil from the herring and place the fish in the cream. Slice the onion and gherkins into rings and add them to the cream along with the bay leaves and juniper berries. Coarsely grate the apple and add it as well. Let the mixture marinate for at least 5 hours. The flavor is even more intense if the herring is marinated the day before.
