Ingredients for 4 servings:

  • 300 g carrot(s)
  • 2 bell peppers
  • 2 zucchinis
  • 1 eggplant(s)
  • 500 g mushrooms
  • 5 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • salt and pepper
  • Sugar
  • 3 garlic cloves, finely chopped

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

Briefly sauté each vegetable individually in olive oil. Salt the mushrooms at this point. Prepare a spicy marinade with olive oil, balsamic vinegar, salt, sugar, pepper, and 2-3 cloves of garlic. Add the still-warm vegetables and let them marinate for 24 hours.
