Ingredients for 6 servings:

  • 1 bell pepper(s)
  • 1 zucchini
  • 1 bunch of carrots
  • 4 onions
  • 500 g mushrooms
  • 1 eggplant(s)
  • Thyme
  • rosemary
  • Parsley
  • salt and pepper
  • 2 garlic cloves
  • e.g. olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

delicious as a barbecue side dish

Blend together olive oil, thyme, rosemary, parsley, salt, pepper, and garlic. The consistency should not be too thick. Wash and chop the vegetables, peel the onions, place them on a baking sheet, and drizzle with the olive oil mixture. Bake in the oven at 220°C for about 20 minutes.
