Marsala – roasted potatoes

Ingredients for 6 servings:

  • 1 ¼ kg potato(s), small, waxy ones
  • Salt and pepper, black from the mill
  • 3 tbsp olive oil
  • 200 ml Marsala, dry

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and peel the potatoes, and boil them in salted water until almost tender. Drain and let them drain well. Heat the oil in an ovenproof frying pan, brown the potatoes on all sides, seasoning with salt and pepper. Add the Marsala and bake the potatoes in a preheated oven at 200°C on the second rack from the bottom for 25-30 minutes. Turn them over several times, then season with salt and pepper. The Marsala should be well reduced by the end of the cooking time.
