Marzipan cake

Ingredients for 24 servings:

  • 200 g butter
  • 400 g marzipan paste
  • 6 eggs
  • 150 g sugar
  • ½ vanilla pod(s), including the pulp
  • 200 g flour (or 150 g and 50 g wholemeal flour)
  • 1 baking powder
  • 200 g chocolate chips

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

First, combine the butter and marzipan. Then gradually beat in the eggs. Add the sugar and vanilla extract, along with the flour mixed with the baking powder. Finally, stir in the chocolate chips. Pour the batter into a casserole dish. Bake at 175-200°C (350-400°F) for about 45-50 minutes. TIP: Do the toothpick test! Do not overbake, as otherwise the cake will become dry.
