Marzipan chocolate liqueur

Ingredients for 1 servings:

  • 400 g marzipan paste, finely diced
  • 350 ml milk
  • 250 g cream
  • 80 g cocoa powder, sweetened
  • 250 ml Amaretto
  • 75 ml liqueur (Licor 43 31% alcohol content)

Dice the marzipan into small cubes and place in a saucepan. Add the milk and heat while stirring until the marzipan dissolves (the milk is usually already quite warm). I usually help it along with a hand blender. Let it cool slightly, then place a large sieve over a large bowl or similar and line it with a tea towel. Pour the mixture into the sieve and sift while stirring. At the end, I wring out the towel to get as much of the milk out as possible. I measure the volume of the marzipan milk with a measuring jug and usually get around 325 ml. Let it cool and stir in the cream. Add the cocoa powder and dissolve it with the help of a hand blender. Finally, stir in the Amaretto and Licor 43, mix briefly again, and store in clean glass bottles in the refrigerator.
