Mascarpone cream with apricots

Ingredients for 4 servings:

  • 500 g mascarpone
  • 75 g powdered sugar
  • 80 ml apricot liqueur (apricot liqueur)
  • 2 tsp instant coffee powder (cappuccino)
  • 1 small can of apricots
  • 20 g almond flakes
  • 12 pieces of biscuit(s) (Amarettini)

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

Sift the powdered sugar and mix with the cappuccino powder. Mix with the mascarpone and 60 ml of apricot liqueur to form a cream and refrigerate. Drain the apricots, slice them, drizzle with the remaining liqueur, and let stand for a while. Briefly toast the almond slivers in a dry pan and let cool thoroughly. Divide the cream among dessert plates and garnish with the apricots, almond slivers, and a few amaretti biscuits.
