Mascarpone peach cream

Ingredients for 6 servings:

  • 1 can peach(s), drained
  • 500 g mascarpone
  • 250 g natural yogurt
  • 2 egg yolks
  • 100 g sugar
  • 0.4 cl eggnog or amaretto or coffee liqueur

Instructions

Working time approx. 5 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 5 minutes

with eggnog

Whisk the mascarpone with yogurt, egg yolk, and sugar until smooth. Cut the peaches into bite-sized pieces and fold in. Add the egg liqueur to taste and chill for at least 2 hours. Amaretto or coffee liqueur can also be used.
