Mascarpone sticks

Ingredients for 1 servings:

  • 250 g mascarpone, possibly light
  • 3 packets of vanilla sugar
  • 1 tbsp powdered sugar, sifted
  • some lemon juice
  • 30 ladyfingers
  • 1 cup cream, possibly low-fat cream substitute
  • ½ bag(s) desiccated coconut
  • possibly mandarin orange(s) from the can

Instructions

Working time approx. 15 minutes; Rest period approx. 1 day; Total time approx. 1 day 15 minutes

Mix the mascarpone, vanilla sugar, powdered sugar, and lemon juice. Transfer the mixture to a piping bag. Pipe the mixture onto the sugar-coated side of the sponge fingers, sticking two sponge fingers together. Briefly dip the sponge fingers into the melted cream and then roll them in the desiccated coconut. Let the finished sponge fingers rest in the refrigerator overnight—they will become soft and fluffy. They’re quick to prepare and make a delicious coffee snack or anytime. If you prefer a fruitier flavor, you can also add two or three canned mandarins to the mix; that’s also delicious.
