Mashed potato casserole

Ingredients for 4 servings:

  • 1 ½ kg potatoes
  • 2 red bell peppers
  • 125 g raw ham, diced
  • 1 pack of bacon
  • 10 eggs
  • 1 pack of cheese, grated

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Boil peeled potatoes with salt. Hard-boil 10 eggs. Dice bell peppers. Fry diced raw ham, add bell peppers, and season generously with thyme, salt, and pepper. Make mashed potatoes with milk, season with nutmeg, and salt. Add roasted bell peppers and diced raw ham, mix, and season again with thyme. Place everything in a casserole dish. Peel and halve the eggs, and press them into the mashed potatoes, yolk-side up. Place bacon on top and sprinkle with grated cheese. Bake the casserole in the oven at 180°C for 15-20 minutes, until the cheese has melted and the bacon is cooked through.
