Matjes – Beans – Salad

The perfect matjes – beans – salad recipe with a picture and simple step-by-step instructions.

  • 300 g Green beans fresh
  • 300 g Wax beans fresh
  • Salt, pepper, a pinch of sugar
  • 1 bunch Radish
  • 1 bunch Spring onions
  • 1 bunch Flat leaf parsley
  • 100 g Through Bacon or bacon
  • 3 tbsp Oil
  • 2 Onions
  • 120 ml Vegetable stock
  • 4 tbsp Red wine vinegar
  • 6 Herring fillets
  1. Clean green beans and wax beans, cut into small pieces and cook in salted water, drain, rinse and let cool down well.
  2. Clean the radishes and spring onions, finely slice the radishes, cut the spring onions into fine rings.
  3. Wash and chop the parsley.
  4. Finely dice bacon and fry in hot oil over medium heat until crispy.
  5. Finely dice the onions, add to the bacon and fry until translucent.
  6. Pour in the stock and bring to the boil, season strongly with vinegar, salt, pepper and a pinch of sugar.
  7. Cut the matjes fillets diagonally into 3 – 4 cm wide pieces.
  8. Mix the bacon dressing with the beans, radishes and spring onions, fold in the matjes and parsley and serve immediately.
  9. Go with fried potatoes.
