Matjes – Beans – Salad

Ingredients
 

  • 300 g Green beans fresh
  • 300 g Wax beans fresh
  • Salt, pepper, a pinch of sugar
  • 1 bunch Radish
  • 1 bunch Spring onions
  • 1 bunch Flat leaf parsley
  • 100 g Through Bacon or bacon
  • 3 tbsp Oil
  • 2 Onions
  • 120 ml Vegetable stock
  • 4 tbsp Red wine vinegar
  • 6 Herring fillets

Instructions
 

  • Clean green beans and wax beans, cut into small pieces and cook in salted water, drain, rinse and let cool down well.
  • Clean the radishes and spring onions, finely slice the radishes, cut the spring onions into fine rings.
  • Wash and chop the parsley.
  • Finely dice bacon and fry in hot oil over medium heat until crispy.
  • Finely dice the onions, add to the bacon and fry until translucent.
  • Pour in the stock and bring to the boil, season strongly with vinegar, salt, pepper and a pinch of sugar.
  • Cut the matjes fillets diagonally into 3 - 4 cm wide pieces.
  • Mix the bacon dressing with the beans, radishes and spring onions, fold in the matjes and parsley and serve immediately.
  • Go with fried potatoes.
