Ingredients
- 300 g Green beans fresh
- 300 g Wax beans fresh
- Salt, pepper, a pinch of sugar
- 1 bunch Radish
- 1 bunch Spring onions
- 1 bunch Flat leaf parsley
- 100 g Through Bacon or bacon
- 3 tbsp Oil
- 2 Onions
- 120 ml Vegetable stock
- 4 tbsp Red wine vinegar
- 6 Herring fillets
Instructions
- Clean green beans and wax beans, cut into small pieces and cook in salted water, drain, rinse and let cool down well.
- Clean the radishes and spring onions, finely slice the radishes, cut the spring onions into fine rings.
- Wash and chop the parsley.
- Finely dice bacon and fry in hot oil over medium heat until crispy.
- Finely dice the onions, add to the bacon and fry until translucent.
- Pour in the stock and bring to the boil, season strongly with vinegar, salt, pepper and a pinch of sugar.
- Cut the matjes fillets diagonally into 3 - 4 cm wide pieces.
- Mix the bacon dressing with the beans, radishes and spring onions, fold in the matjes and parsley and serve immediately.
- Go with fried potatoes.
