Matjes in red wine

Ingredients for 5 servings:

  • 10 fish fillets (matjes fillets)
  • 500 ml vinegar (red wine vinegar)
  • 250 g brown sugar
  • 2 bay leaves
  • 1 tbsp pepper (corns)
  • ¼ tsp fennel seeds
  • 2 onions, red
  • 2 bunches of dill
  • 250 ml water

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

with fennel seeds, red onions and dill

Rinse the herring fillets in cold water and pat dry with kitchen paper. Bring the vinegar to a boil with 1/4 liter of water, sugar, and spices. Add the onion rings and let everything cool. Layer the herring fillets in a glass bowl and pour the stock over them. Place dill sprigs on top of the pickled herring. Let it marinate overnight in the refrigerator.
