Matjes salad with beef

Ingredients for 4 servings:

  • 12 fish fillets (matjes)
  • 1 jar beetroot
  • 1 jar of pickles
  • 2 apples, peeled
  • 3 onions
  • 250 g beef, cooked
  • 200 g potatoes, cooked
  • 4 tbsp mayonnaise
  • 1 lemon(s), the juice
  • 1 cup of yogurt
  • 1 cup crème fraîche
  • 4 tbsp walnuts, chopped
  • 3 tbsp vinegar (wine vinegar)
  • 1 cup of cream
  • salt and pepper
  • Sugar

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

First, prepare the marinade. To do this, combine mayonnaise, skimmed milk yogurt, crème fraîche, chopped walnuts, white wine vinegar, and lemon juice. Season with sugar, pepper, and salt. Let it rest in the refrigerator for about 20 minutes. Dice the herring fillet, beetroot, gherkins, apples, onions, beef, and potatoes and mix. Mix the marinade with the mixture. Whip the cream and fold in. Also suitable as a spread. Tastes delicious with brown bread.
