Ingredients for 4 servings:

  • 4 herring fillet(s) (double matjes)
  • 200 g sour cream
  • 150 g yogurt
  • 150 g mayonnaise
  • 1 tbsp mustard, medium hot
  • 2 apples
  • 150 g onion(s)
  • 2 gherkins
  • 100 g mustard pickle(s)
  • 1 tbsp capers
  • 2 bay leaves
  • salt and pepper
  • Sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

Mustard makes the sauce spicy

Whisk the sour cream, yogurt, and mayonnaise with the mustard until smooth. Finely chop the apples, onions, cucumbers, and pickles and fold them in with the capers. Cut the herring fillet into bite-sized pieces and fold them in as well. Finally, add the bay leaves and let everything marinate for several hours. Season to taste with salt, pepper, and sugar before serving. A delicacy with boiled potatoes.
