Ingredients for 6 servings:

  • 18 large Maultaschen, 60 g each
  • 600 g mushrooms, fresh
  • 200 g Emmental cheese, grated
  • 100 g bacon cubes
  • 6 eggs
  • 2 onions
  • 2 cloves garlic
  • 1 tbsp, heaped vegetable stock
  • 4 tbsp oil for frying
  • 3 tbsp parsley, chopped
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

In a bowl, whisk the eggs with the vegetable stock and stir in the grated cheese. Peel the onions and dice them into small cubes. Peel the mushrooms and slice them. Cut the Maultaschen into bite-sized slices. Press or mince the garlic. Heat the oil in a pan. Fry the bacon and mushrooms with the onions. Then add the Maultaschen and garlic and fry until the Maultaschen are lightly browned all over. Then pour the egg and cheese mixture over everything and fry well again (about 5 minutes). Season with salt and pepper and sprinkle with the parsley to serve. Serve with herb baguette and salad.
