Maundy Thursday potatoes

Ingredients for 8 servings:

  • 8 large potatoes (floury), peeled and cut into 2.5 cm cubes
  • 170 g sour cream
  • 1 tsp sugar
  • 4 tbsp butter
  • 2 tsp salt
  • Pepper, freshly ground (strong)
  • 2 tbsp fresh, chopped dill
  • 300 g spinach, frozen, cooked, and carefully drained
  • 115 g cheese, grated (Cheddar or Dutch , Gruyère)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

best if it is prepared the day before and baked the next day

Boil the potatoes and mash them while still hot. Add the sour cream, sugar, and butter and beat until smooth. Stir in the remaining ingredients. If preparing the dish the day before, refrigerate it now. Preheat the oven to 200°C. Pour the potato mixture into a greased casserole dish and bake for 30 minutes, or until bubbling. Serve with eggs, prepared as desired.
