Ingredients for 4 servings:

  • 1 egg yolk
  • Salt
  • 1 tsp mustard
  • 8 tbsp oil
  • 1 tbsp lemon juice or vinegar
  • 1 pinch(s) of sugar
  • pepper
  • 2 tbsp cream
  • herbs or onion

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Whisk together the egg yolk and salt; stir in 1 teaspoon of mustard (reduces the risk of curdling); slowly stir in the first half of the oil, not too cold, drop by drop until the mixture thickens; stir in the remaining oil alternately with vinegar (or lemon juice). If desired, you can now stir in the cream and herbs. Season to taste with sugar, pepper, and salt. You don’t have to stir by hand, though; it works wonderfully with a hand blender. Then you can use the whole egg, too.
