Meatballs with a twist

Ingredients for 4 servings:

  • 500 g minced meat, mixed or pork, not pure beef
  • 1 onion(s)
  • 1 garlic clove(s)
  • 200 g rolls or toast
  • 100 ml milk for soaking
  • 10 stalk(s) asparagus, green from the jar
  • nutmeg
  • 3 tbsp soy sauce, sweet or light
  • 1 tbsp mustard
  • salt and pepper
  • chili

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Soak the rolls or toast in the milk and squeeze out any excess water. Use the asparagus from a jar. It’s not usually a good solution, but it’s perfect for the meatballs. Chop everything up and mix it together. You can now season everything to taste, but be careful, the flavor will be much more intense after frying or grilling. If you’re definitely lacking salt, add a little more soy sauce. If the mixture is too firm, add another egg yolk. If it’s too soft, add more rolls. Don’t use breadcrumbs, it doesn’t bind well and overpowers the flavor. If you like a more playful flavor, add some kohlrabi from a jar or even corn. Form the meat mixture into meatballs and fry as usual.
