Ingredients for 4 servings:

  • 1 stale roll
  • 2 carrots
  • 300 g minced pork
  • 200 g minced beef
  • 2 tbsp almond(s), peeled chopped
  • 2 eggs
  • ½ tsp salt
  • 2 tbsp liver sausage
  • 1 tbsp fat
  • 5 tbsp breadcrumbs

Working time approx. 20 minutes; Total time approx. 20 minutes

A recipe from my grandma

Soak the bread roll in lukewarm water. Scrape and wash the carrots, and coarsely grate them using a grater. Preheat oven to 180 degrees Celsius. Squeeze out the excess water from the bread roll and tear it into pieces. Thoroughly mix the minced meat with the almonds, bread mixture, eggs, grated carrots, salt, and liverwurst. Grease a loaf pan with butter and sprinkle with breadcrumbs. Press the meat mixture firmly into the pan and smooth the surface. Place parchment paper on top and bake in the preheated oven for 35 minutes. Turn the meatloaf out onto a preheated platter and slice. Serve with a simple light sauce (e.g., caper sauce) and fried potatoes.
