Medallions in Gorgonzola

Ingredients for 4 servings:

  • 600 g pork fillet(s) in one piece
  • salt and pepper
  • 100 g smoked bacon
  • 70 g Gorgonzola
  • 1 cup crème fraîche
  • 3 tbsp pine nuts or pistachios
  • Paprika powder

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cut the fillet into thumb-thick slices and season both sides with paprika, pepper, and salt. Dice the bacon. Fry the medallions on both sides until lightly browned. Then place them close together in an ovenproof dish. Sprinkle the bacon cubes over the meat. Blend the Gorgonzola and crème fraîche until creamy and stir in the pine nuts. Pour over the meat. Cook in a preheated oven at 200°C for about 20 minutes. Serve immediately.
