Ingredients for 4 servings:
- 600 g jacket potatoes
- 150 g Parma ham
- 4 tomatoes
- 2 garlic cloves
- Salt
- Pepper, freshly ground
- 2 sprigs of thyme
- 2 sprigs rosemary
- olive oil
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Boil the potatoes the day before. On the day of preparation, peel the potatoes and slice them thinly. Cut the ham into thin strips. Briefly place the tomatoes in boiling water, then peel and dice them finely. Peel the garlic cloves and dice them finely. Heat the olive oil in a pan. Briefly fry the chopped ham and garlic. Then add the sliced potatoes and fry gently. Cook for three to four minutes. Then stir in the chopped tomatoes and herbs and continue frying. Season with salt and pepper.
