Ingredients for 4 servings:
- 1 kg potato(s), floury to firm-cooking
- 100 g butter
- 1 onion(s)
- 2 garlic cloves
- 1 pinch(s) of sugar
- 150 ml vegetable stock
- 150 ml olive oil
- 10 ml lemon juice
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Peel the potatoes and boil in salted water. Season with caraway seeds. Drain the potatoes and mash them coarsely. Peel and dice the onion. Melt the butter in a pan and fry the onions. Peel and finely chop the garlic cloves. Push the onions to one side in the pan, add the garlic to the empty space, and fry. Then combine both. Add salt and pepper and caramelize with a little sugar. Pour the vegetable stock and olive oil over the mashed potatoes and mix. Finally, add the onions to the potato mixture, fold in, and let it macerate. Finally, add a little lemon juice and stir in.
