Mediterranean meatballs, low in calories

Ingredients for 2 servings:

  • 2 onions
  • 2 garlic cloves
  • 3 tbsp water
  • 50 g arugula
  • 300 g zucchini
  • 200 g tartar
  • 1 tbsp Italian herbs
  • 1 egg(s)
  • 1 tbsp breadcrumbs
  • salt and pepper

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Peel and dice the onions and garlic. Heat 3 tablespoons of water, sauté the onions and garlic, and let cool slightly. Wash and trim the arugula, spin it dry, remove any tough stems, and finely chop the leaves. Peel and grate the zucchini. Combine the prepared ingredients with the tartar sauce, herbs, egg, and breadcrumbs. Season with salt and pepper, and form into flat meatballs. Heat a nonstick pan without fat and fry the meatballs over medium heat for 8-10 minutes on each side until crispy.
