Melanie's foolproof hazelnut cookies

Spread the love

Ingredients for 1 servings:

  • 125 g butter (margarine can also be used)
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 2 tbsp rum
  • 200 g flour
  • 50 g cornstarch
  • 2 tsp baking powder
  • 1 egg(s)
  • 65 g hazelnuts, ground

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

makes about 50 pieces

Make a dough from all the ingredients, wrap in aluminum foil, and let rest in the refrigerator for a while (preferably overnight). You have a variety of options when it comes to shaping the cookies. You can either roll out the dough and cut out cookies, or use a cookie press—that’s what I always do. Then place the cookies on a greased or parchment-lined baking sheet. Bake the cookies at 180 degrees Celsius until the edges are slightly browned. This takes about 15 minutes. The cookies will be quite soft to begin with, so let them cool slightly before removing them from the baking sheet. You can decorate the cookies however you like—I always dip half of them in dark chocolate. Making these truly delicious cookies is really no art, and they always turn out delicious.
