Ingredients for 1 servings:

  • 4 cups flour
  • 2 pts. baking powder
  • 1 ½ cup(s) sugar
  • 2 cups buttermilk
  • 2 eggs
  • 1 cup sugar (for the topping)
  • 1 package desiccated coconut (for the topping)
  • 1 cup of cream

Working time approx. 20 minutes; Total time approx. 20 minutes

Please note: “Cup” refers to a cup like you would find in a coffee set, not a coffee mug! The cup is the unit of measurement for the entire recipe! Make a batter from the flour and eggs and stir until it bubbles. Then spread the batter evenly on a greased or parchment-lined baking sheet. Mix the sugar with the desiccated coconut and spread evenly over the batter. Bake the cake at 180 degrees Celsius for about 25-30 minutes. Spread the cup of cream on top of the hot cake. This will make it nice and moist!
