Ingredients for 1 servings:

  • 3 egg whites
  • 200 g sugar
  • 1 tbsp vanilla sugar
  • 2 pinches of cinnamon
  • 1 tsp lemon zest, grated
  • 2 apples, cut into cubes
  • 1 tbsp sugar
  • 1 pinch of cinnamon
  • 1 tsp butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Beat the egg whites until stiff, then add the sugar and vanilla sugar in portions and continue beating until smooth and sticky. Fold in the lemon zest. Fill a piping bag with the meringue mixture with a star nozzle and pipe onto a baking paper basket. Bake at 100°C (212°F) for about 90 minutes. Meanwhile, peel and core the apple, and finely dice it. Add the diced apples, sugar, and cinnamon to the hot butter and let it caramelize. Place the diced apples into the cooled meringue baskets.
