Mexican Chipotle Sauce

Ingredients for 4 servings:

  • 250 ml mayonnaise
  • 15 ml mustard (Dijon mustard)
  • 15 ml lime juice, freshly squeezed
  • 15 ml chili sauce (chipotle chili in adobo)
  • 2 garlic cloves, chopped
  • Salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

A dip, tastes similar to the Southwest Sauce at subways

Combine mayonnaise, mustard, lime juice, garlic, and chili sauce in a tall bowl and blend with an immersion blender until smooth. Season with salt. Tastes great with tortilla chips, as a vegetable dip, and as a dressing. It will keep for several days in the refrigerator. Chipotles are available online, from Mexican and US stores, and Spanish specialty stores sometimes carry chipotles in adobo. Depending on the brand, you can use more or less chili (the “La Costena” variety is on the hotter side; you might need a bit more with “El Torre”).
