Mexico Fried Eggs

The perfect mexico fried eggs recipe with a picture and simple step-by-step instructions.

  • 60 g Grated cheese 30% fat in dry matter
  • 1 small Diced onion
  • 1 Garlic clove crushed
  • 70 g Kidney beans canned, the rest just for next. Freeze time!
  • 70 g Corn cooked, rest as above 🙂
  • 2 tbsp Oil
  • 1 tsp Seasoned salt from my KB
  • 1 tsp Garlic pepper from my KB
  • 0,25 tsp Ground cumin
  • 1 pinch Chili powder
  • 125 ml Passed tomatoes, rest in 2 ports. freeze! 🙂
  • 4 Eggs size M
  • Parchment paper
  • Tellicherry pepper and salt
  • Frozen chives

Preheat the oven to 250 degrees!

  1. Line the baking sheet with baking paper and make 4 piles of the cheese and sprinkle with a little chives! Bake in the oven for 10 minutes. Then let it cool down!
  2. Heat 1 tablespoon of oil in a saucepan and roast the onion cubes and garlic until golden brown. Then kidney beans and corn! Fry briefly, then deglaze with tomato puree and season with seasoning salt, garip pepper, cumin and chilli! Set to the lowest level.
  3. Heat 1 tablespoons of oil in a pan and beat in 4 eggs. Salt a little and season with a little Tellycherry pepper. Fry eggs for about 10-15 minutes!
  4. Then serve the eggs with the corn vegetables and cheese crackers! Garnish with chives!
