Million Dollar Roadkill Chicken

Ingredients for 4 servings:

  • 1 chicken
  • 1 lemon(s), untreated
  • 1 bunch thyme, fresh
  • 2 bay leaves
  • 5 cloves garlic
  • 4 slice(s) bread(s) , (farmer’s bread), large slices
  • 4 tbsp olive oil
  • 125 g crème fraîche
  • 1 shallot(s), grated
  • n. B. Salt
  • n. B. Pfeffer

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

For the marinade: Grate the lemon zest. Mix the crème fraîche with 1 tablespoon of grated lemon zest and the grated shallot. Season with salt and pepper and set aside. For the chicken: Remove the spine and break the breast by applying pressure to flatten the chicken. Drizzle the chicken on both sides with lemon juice and season with salt and pepper. Chill in the refrigerator. Prepare the grill for indirect heat. Place the bread slices in the indirect area. Spread the thyme, bay leaves, and garlic on the bread and drizzle everything with olive oil. Remove the chicken from the refrigerator and brush with the marinade. Place the chicken flat-side down on the bread slices and grill indirectly at 180 degrees Celsius for about 45 minutes, until an internal temperature of 78 degrees Celsius is reached.
