Ingredients for 4 servings:
- 150 ml water, lukewarm
- 1 packet of dry yeast or 1/2 cube of fresh yeast
- 1 pinch(s) of sugar
- 1 pinch of salt
- 450 g flour
- 2 tbsp yogurt, 3.5%
- 2 tbsp oil
- 250 g minced meat
- 1 onion(s)
- 1 garlic clove(s)
- some oil
- 1 tomato(s)
- Olives, green, pitted
- 100 g feta cheese
- n. B. Nutmeg
- salt and pepper
- n. B. Black cumin
- 4 eggs
- 1 tbsp milk, 1.5%
Instructions
Working time approx. 30 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 35 minutes
For the dough: In a bowl, dissolve the yeast and sugar in lukewarm water. In another bowl, add the flour, salt, yogurt, and oil. Add the yeast mixture and knead into a smooth, even dough. Cover and let rise in a warm place for at least 45 minutes. For the filling: Sauté the onions and garlic, then add the minced meat and sauté. Dice the tomato, slice the olives, and add them to the minced meat. Season everything with salt, pepper, and nutmeg. Mix 2 eggs into the mixture. Dice the feta cheese. Divide the dough into 4-6 equal portions and roll out into oblong-oval flatbreads. Place the minced meat mixture in the center, fold in the edges, and twist at the ends. Beat an egg and brush it onto the visible mixture. Finally, whisk 1 egg yolk with the milk, brush the edges with it, and sprinkle with black cumin. Bake in a preheated oven at 200°C (top/bottom heat) for at least 20 minutes. The topping can be varied as desired, e.g., with spinach, feta cheese, etc.
