Stuffed Onion with Minced Meat and Fried Potato Cubes & Gravy

- 4 piece Vegetable onions
- 500 g Ground beef
- 1 tsp Tomato ketchup
- 1 piece Clove of garlic
- 1 pinch Star anise
- 1 pinch Cinammon
- 2 piece Juniper berries
- 3 piece Allspice grains
- 20 piece Black peppercorns
- 500 g Potatoes
- Fat for deep-frying
- Salt
- 1 kg Beef bones
- Onion
- Celery
- Carrots
- Oil
- 2 tbsp Tomato paste
- 250 ml Red wine
- 5 piece Juniper
- 1 pole Cinammon
- 1 liter Water
- Roast the spices and then grind them in a mortar. Mix salt and nutmeg (freshly grated) and, to taste, mix the ketchup, garlic and spices with the minced meat mixture. Season with salt and nutmeg. Peel the onions and cut off the lid. Remove very little at the bottom – just enough so that the onions stay upright. Fill with the minced meat mixture. Put the stuffed onion in a baking dish and bake at 200 ° C for about 30 minutes.
- Peel the potatoes and cut them into 1 x 1 cm cubes. Heat the fat in the deep fryer to 170 to 180 ° C. Fry the cubes in portions until golden brown. Take out the potatoes and let them drain on kitchen paper. Season with salt.
- Fry the bones vigorously in the oil, add the vegetables, fry everything vigorously. Add the tomato paste and stir everything together. Deglaze with water and allow to evaporate again. Repeat everything 3 to 4 times, deglazing with red wine the last time. Fill up with water, transfer everything into a tall saucepan and let simmer (reduce) for another 2 hours (without lid!). Then happen. Collect the sauce in a container. Then season with salt.
