Ingredients for 4 servings:

- 100 g bacon (strips)
- 1 large onion(s), finely chopped
- 2 tbsp breadcrumbs
- e.g. butter
- 1 garlic clove(s), squeezed
- 1 tsp tomato paste
- 2 tsp mustard, medium hot
- 400 g minced beef
- 2 chili peppers, dried, chopped
- 2 eggs
- 1 tbsp, heaped parsley, chopped
- 1 tbsp marjoram, chopped
- salt and pepper
- 4 tbsp Cheddar cheese, grated
- 1 tbsp clarified butter
- 1 tbsp black peppercorns
- n. B. Oil
- 3 bell peppers, red, green, yellow
- 1 large onion(s), finely chopped
- e.g. butter
- e.g. powdered sugar
- 2 cl brandy
- 125 ml white wine
- 250 ml vegetable stock
- 1 tsp paprika powder, hot
- 1 tsp sweet paprika powder
- 1 cup sour cream
- Salt
Instructions
Working time approx. 30 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 30 minutes; Total time approx. 4 hours
For the sauce, soak the peppercorns in oil for 2 to 3 hours. Soak the bread roll in milk. Heat butter in a pan and add the bacon. When the bacon is browned, add the onion and fry until translucent. Transfer the bacon and onion mixture to a bowl and let cool. Add the crushed garlic, tomato paste, mustard, squeezed bread roll, breadcrumbs, chopped chili peppers, eggs, and herbs. Knead into the minced meat, season with salt and pepper. Form four burgers and work 1 tablespoon of Cheddar cheese into the center of each. Heat the clarified butter in a pan and fry the steaks for about 5 minutes on each side. For the sauce, deseed, wash, and very finely dice the peppers. Heat the butter in a pan and sauté the onion until translucent and lightly browned. Dust lightly with powdered sugar and let it caramelize slightly. Deglaze with the brandy and simmer until the brandy has evaporated. Then add the diced bell peppers, simmer slightly, deglaze with the white wine, and bring to a boil briefly. Pour in the vegetable stock, add the drained peppercorns, and season with both types of paprika and salt. Simmer for 10 minutes, then add the sour cream. Bring to a boil briefly and season with salt. Serve with rice.
