Party snack with two different fillings
Place all the dough ingredients in a bowl and knead for 5-10 minutes (using a food processor or hand mixer). Then, cover the dough with a tea towel and let it rise in a warm place for 30 minutes. In the meantime, chop the ingredients for the two fillings and mix each in two separate bowls. Season to taste. Roll out the dough on a floured surface and cut out circles about 15 cm in size. Brush the edges of the circles with egg white and add a little filling (2-3 tablespoons) to each circle. Fold each circle closed, press the edges firmly together with your fingers, and place the mini calzones on baking sheets lined with baking paper. When a sheet is full (I had about 6 calzones on it), brush the mini calzones with beaten and salted egg yolk and sprinkle with some grated cheese. Place the baking sheets in the oven at 225°C (425°F) for 15-20 minutes each, until the calzones are golden brown. The calzones taste just as good warm as they do cold. They make a great party snack, a packed lunch, or simply an alternative to regular pizza. Of course, you can change the fillings to suit your taste.
