Mini meatloaf with bacon and spinach

Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 1 onion(s), finely chopped
  • 1 bread roll(s), soaked and squeezed
  • 1 bunch parsley, finely chopped
  • 1 egg(s)
  • salt and pepper
  • nutmeg
  • 12 strips of bacon
  • 50 g leaf spinach, washed

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 23 minutes; Total time approx. 38 minutes

You’ll need 12 small, oblong baking dishes (8 x 5 x 3 cm). Knead the minced meat, breadcrumbs, egg, parsley, and onions into a meat dough, and season to taste. Line each dish with a strip of bacon, fill halfway with the meat dough, add a few spinach leaves, then more meat dough, and fold the excess bacon over the meat. Bake in a preheated oven at 180°C (top/bottom heat) for about 20 minutes. Remove the meatloaf from the dish and place it under the hot grill for 3 minutes to crisp the bacon. It also tastes delicious cold.
