Mini Rösti with glazed apple and goat cheese

Ingredients for 4 servings:

  • 3 m.-sized potatoes
  • salt and pepper
  • Thyme
  • 1 tbsp clarified butter
  • 1 apple, preferably with red skin
  • ½ tbsp sugar
  • 1 tbsp butter
  • 2 goat’s cheeses, 40 g each
  • some lettuce

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Amuse gueule or starter also suitable for vegetarians

Boil potatoes, unpeeled, in salted water until slightly tender. Peel and coarsely grate. Season with salt, pepper, and thyme. Shape into four small rösti and fry in hot clarified butter. Cut the goat’s cheese into four slices. Core the apple using an apple corer. Cut four slices from the center. Melt the butter and sugar in a pan and glaze the apple slices. Place in an ovenproof dish and top each with a slice of goat’s cheese. Melt under the grill. Place on top of the rösti and serve garnished with a sprig of thyme and lettuce leaves.
