Mirabelle jam with vanilla

Ingredients for 8 servings:

  • 1 kg gelling sugar, 1:1
  • 1 kg mirabelle plums, without stones
  • 1 packet of vanilla sugar
  • 1 packet of citric acid or 6-7 tbsp lemon juice)

Working time approx. 30 minutes; Total time approx. 30 minutes

Fruity, fine – just as jam should be

Pit the mirabelle plums and weigh out 1000g. Let them steep with the sugar in a sufficiently large saucepan for 1 hour. Then add the citric acid and vanilla sugar. Bring to a boil while stirring and simmer for about 5 minutes, until everything sets nicely. Pour the jam into sterilized jars. I always wipe the lids with schnapps beforehand and briefly turn the jars upside down after filling. This yields 8-9 medium-sized jars.
