Mirror Glaze – a recipe for the mirror glaze for the cake

A mirror glaze coating turns your cake into something very special.

  • To cover a cake with the mirror glaze, you need 20 g of ground gelatin and 270 ml of water.
  • Furthermore, the coating consists of 150ml glucose syrup, 200g sweet condensed milk, 300g sugar, and 300g white chocolate or white couverture. Color the cake topping with food coloring.
  • You will also need a cooking thermometer to make the mirror coating.
  • When the cake is ready, you can start with the mirror glaze. To do this, dissolve the gelatine in 120 g of water. It may take about a quarter of an hour for the gelatin to swell.
  • Briefly boil the remaining water with the sugar and the glucose syrup in a saucepan. Then take the pot off the heat and add the gelatine and the sweet condensed milk.
  • While the mixture is still hot, add the chopped white chocolate to melt it. Mix everything thoroughly. This is best done with a hand blender.
  • If you want to glaze the cake in more than one color, divide the previously finished mass into different portions and stir in the desired food coloring. Now the thermometer is used. In order to be able to glaze the cake with the Mirror Glaze, the mass should have 35°.
  • The glazing itself is relatively easy. You don’t have to spread the glaze, it spreads itself out and sticks well. It is best to spread the icing first on the edge and then in the middle. Once the frosting has cooled, you can serve your Mirror Glaze cake.
  • Decorating tip for your cake: Use different colors for the icing. You can achieve great effects in the transitions by stirring or smearing the glaze a little with a wooden stick immediately after application.
