Ingredients for 4 servings:
- 500 g minced meat, mixed
- 8 cubes of Gouda
- 1 small onion(s)
- 2 tsp spice mix (minced meat seasoning)
- 2 tbsp barbecue sauce, e.g. Mississippi BBQ sauce
- 8 slices of bacon
Instructions
Working time approx. 20 minutes; Rest time approx. 5 hours; Cooking/baking time approx. 1 hour; Total time approx. 6 hours 20 minutes
based on a recipe from BBQ veteran Torsten
Dice the onions and add them to the minced meat along with the minced meat seasoning and BBQ sauce. Mix well. Let the meat rest in the refrigerator for at least 5 hours, preferably overnight. After the resting time, shape the minced meat into balls and press a cube of Gouda into the middle. Wrap the balls in bacon and secure with one or two toothpicks. Preheat the oven to 110°C (top/bottom heat). Cook the balls for about 30 minutes. At the end of the cooking time, remove the Moink balls and increase the temperature to 250°C. While the oven is heating up, brush the balls with BBQ sauce. Let the balls glaze in the oven for about 10 minutes. Reduce the oven temperature to 100°C and briefly open the door to let the heat out. Finally, leave the balls in the oven for another 20 minutes. The balls lose quite a bit of liquid, so it’s best to use a taller baking tray if you have one.
