Moist apple sponge cake

Ingredients for 1 servings:

  • 1 sachet of pudding powder (vanilla flavor)
  • 6 tbsp milk (whole milk)
  • 150 g butter
  • 150 g brown sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 1 pinch of salt
  • 250 g flour
  • 3 tsp baking powder
  • 5 apples
  • 2 tbsp lemon juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Mix the pudding mix with the milk in a small bowl. Beat the softened butter with the sugar in a food processor, then add the salt, then the eggs, and finally the sifted flour mixed with the baking powder. Peel, quarter, and core the apples, then slice them into thin strips. Mix with the lemon juice and add them to the batter. The apple slices will “break” a little. Mix everything thoroughly again, then pour the batter into a loaf or springform pan and bake at 180°C (fan oven) for about one hour (depending on the amount of apple mixture). Turn out the batter and let it cool. This is a delicious, moist cake; you can add more apples for extra moisture.
