Moist fruit cake

Ingredients for 1 servings:

  • 5 apples or pears, possibly from a can or
  • Fruit of your choice
  • 200 g flour
  • 200 g sugar
  • 5 eggs
  • 1 packet of baking powder
  • 200 ml milk
  • 6 tbsp olive oil
  • 1 pinch of salt
  • possibly oil for the mold
  • possibly flour for the mold

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel the fruit or drain well and cut into slices. In a bowl, beat the eggs with the sugar and a pinch of salt until creamy. Slowly add the flour and baking powder, stir in the lukewarm milk and olive oil, and fold in the fruit slices. Bake the mixture in an oiled and floured or breadcrumbed cake tin at 180°C (preheated) for about 35 minutes. If you are using a silicone baking tin, there is no need to oil or dust it. Enjoy warm or cold. Instead of apples or pears, you can also use plums, cherries, gooseberries, blueberries, or similar fruits. Thanks to the olive oil, this cake is very moist. You usually have the ingredients at home, and because it’s so quick to prepare, unexpected guests are no problem.
