Ingredients for 1 servings:

  • 5 egg whites
  • 2 egg yolks
  • 1 egg(s)
  • 1 cup oil
  • 250 g low-fat curd cheese
  • 50 ml cream
  • 2 apples
  • 120 g pitted dates
  • 100 g almonds, ground
  • 120 g poppy seeds
  • 120 g desiccated coconut
  • 1 packet of baking powder

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Beat the egg whites until stiff. Meanwhile, core an apple and zest it with the skin. Beat the whole egg with 2 egg yolks until frothy. Add the oil and quark and mix well, then add the grated apple. Add the finely chopped dates to the mixture and mix everything together with a wooden spoon. Mix the almonds, poppy seeds, and desiccated coconut together with the baking powder and stir in. If the batter is too thick, add a little cream. Carefully fold in the beaten egg whites. Pour the batter into a round baking dish. Core the second apple and, without peeling it, cut it into thin slices. Arrange them in a star shape on the batter (pressing the long end into the batter). Bake in a fan-assisted oven at 180°C for approx. 40-45 minutes.
