Ingredients for 2 servings:
- 400 g flour
- 1 ½ tsp salt
- 1 tsp baking soda
- ½ tsp baking powder
- 160 ml butter, sweet cream
- 320 ml sugar
- 2 eggs, size L
- 4 bananas, very ripe
- 125 g walnuts, chopped or pecans, optional

for 2 loaves of bread
Position an oven rack in the lower third of the oven. Preheat the oven to 180°C (350°F). Grease two rectangular cake pans with butter to prevent the bread from sticking. Whisk together the flour, salt, baking soda, and baking powder. Using an electric mixer on high speed, beat the butter and sugar in a large bowl for 2-3 minutes until light and crumbly. It helps to cut the butter into small pieces. Then beat in the flour mixture until the mixture resembles a grainy texture. Lightly beat the eggs and gradually beat in. Peel and mash the bananas, then stir them into the batter. If you want walnuts or pecans, add them now. Divide the batter evenly among the cake pans and bake for 50-60 minutes, depending on your oven type. To test, insert a wooden toothpick into the pan; if it comes out dry, the banana bread is done. After removing the bread, let it cool in the cake tins for 5-10 minutes, then remove it in one piece and let it cool further if desired.
